Easy Peasy Apple & Cashew Granola
Stuck at home and trying to stay healthy/sane? I have just what you need! I’ve wanting to share my favourite granola recipe for the longest time, and now I am - because we all need some deliciousness in our lives this week, right?
My mother is the queen of granola and no matter how hard I try I can’t make it quite like she does (the lament of daughters around the world) but it’s pretty darn close. This granola recipe is so easy, healthy and delicious I’m certain you’re going to love it as much as I do and you’ll never ever buy over-processed, sugary granola from the grocery store shelves ever again.
INGREDIENTS
2 cups of rolled oats
1 cup of crushed of cashew nuts (not too finely crushed; some of the nuts might still even be whole)
1 cup of dried apple (if you have bigger pieces cut them into small chunks about 1cm x 1cm)
Half cup of mixed seeds (I use a combination of pumpkin, sunflower and linseeds)
1 tbsp coconut oil (melted if it’s hard)
1.5tbsp honey (or maple syrup to make it vegan)
METHOD
Pre-heat your oven to 180 degrees C.
TIP: if your coconut oil is hard this is a great time to pop it in an oven proof bowl and heat it up so it melts down whilst you chop apple pieces and loosely crush the cashew nuts.
In a bowl, combine oats, cashew nuts and seeds and mixed it all through. *Apple goes in very last!
Separately, mix the melted coconut oil into the honey (or maple syrup) and stir it up with a fork until it’s mostly combined.
Add the coconut-honey mixture to the dry ingredients and mix thoroughly.
Cover a baking tray with your granola mixture and bake in the oven for 15 minutes, taking it out half way through to turn so that it bakes evenly.
Remove the granola mixture (it should be a yummy golden brown colour now) and add the apple pieces. Return the tray to the oven and bake for another 5 minutes or until the apple has turned a light brown colour. *Make sure to keep a close eye on your granola at this point because apple burns very quickly.
Remove your granola from the oven, turn it and leave it to cool before storing in a mason of kilner jar.
Enjoy with a large dollop of yogurt or a splash of milk and hot cup of coffee (obvs ;).
